The Valley of the Beholder is described by Dungeon Master as being far to the east of a desert. It was once the most beautiful valley in the Realm until the beholder destroyed all vegetation there, but when it retreated back into the Underworld the vegetation spontaneously returned.
Presumably the valley was called something else before the beholder took up residence there unless the beholder specifically chose valley because it was its namesake.
